Food Trucks Available While Student Union Renovates Posted Friday, August 18, 2017 @ 3:46 PM Starting Monday, the first day of the fall 2017 semester, marks the start of a two-year renovation and expansion of the Student Union. Once completed, the Union will boast a state-of-the-art food court, meeting chambers, Student Government suite, a permanent Reflection Room, an additional conference room, and approximately 350 additional seats in the two-story food court lounge. The food court will comprise the first phase of construction and will be completed in the summer 2018 semester. The food court will offer five vendors: Q’Doba, Which Wich Sandwiches, Steak N’ Shake, Panda Express, and Huey Magoos, in addition to the Union’s other food offerings. While the food court is under construction, all seating will be moved throughout the Student Union to ensure there is little reduction in seating options. The second phase of the project will see the completion of the food court lounge, SGA suite, meeting chambers and Reflection Room. This phase is scheduled to be completed for the fall 2019 semester. While the food court is under construction, the Student Union food offerings will include Q’Doba, Chili’s, Boar’s Head Subs, Huey Magoos, Smoothie King, Mrs. Fields, Knight Stop, and Café Bustelo. Until more food vendors become available, two food trucks will be available on Pegasus Circle between the Student Union and Memory Mall from 10 a.m.-2 p.m., Monday-Friday.
