Fresh U Mobile Demo: Chocolate Peanut Butter “Ice Cream”

On Tuesday, October 30th the Wellness and Health Promotion Services came to UCF’s Memory Mall to present their Fresh U Mobile Cooking Demo. Starting at noon, hostesses Megan Case and Stephanie Spies began their demonstration making a simple yet cost-effective ice cream with only three ingredients: peanut butter, frozen bananas, and cocoa powder. The ice cream feeds two and takes only five minutes to prepare. Knights Pantry provides a free service to students offering donated produce for many of Fresh U’s recipes.

Ten fellow knights came to enjoy a sample of the freshly made dessert. Some students opted for the nut-free option which replaced peanut butter with sunflower seed butter. Jamesha John-Lewis noted that the “recipes are unique, not something I would think of, but they’re easy and good.”

The presentation was short and simple, only taking about five minutes from start to finish. Fresh U also hosts Fresh U Kitchen Cooking Demos. The event allows you to cook with the presenter and take ingredients home with you.
