UCF Wellness and Health Promotion Services (WHPS) offers a wide variety of services and programs aimed at helping all UCF students be healthy Knights! One such program, the FreshU Mobile Cooking Demo, traverses the UCF campus, teaching students how to incorporate fruits and vegetables into their diets and reduce food waste. Students get to see the process, taste the dish, and take home a recipe card.

On the first day of class, the FreshU Mobile Cooking Demo was serving up eggplant meatballs with a vegan option. Students were pleased to have the option, as one student commented, “Thank you for having a vegan option. Most people do vegetarian, but not vegan.” Other students were surprised at how much they liked the eggplant meatball, “Wow, are you sure there’s no meat in here?” In total, the Mobile Cooking Demo served up 50 samples to hungry Knights.

The FreshU Mobile Cooking Demo rolls on with stops at Knightro’s on September 19 and Memory Mall on September 26. For more information on the Mobile Cooking Demo and WHPS, visit the Wellness and Health Promotion Services website.
